Apple Mint Couscous
Apple Mint Couscous
20 minute cook time with a 3 1/2 cup yield
Ingredients
1 Tbsp plus 1 teaspoon butter
1 cup peeled and finely choppe apples
1 Tbsp minced shallots
1 tsp minced garlic
3 Tbsp chopped fresh mint, plus extra for garnish
Salt and pepper
1 Cup couscous
1 Tbsp olive oil
1 cup veggie stock
2 oz. crumbled feta
Directions
In a saute pan, heat 1 Tbsp of butter. When the butter is melted, add the apples, shallots garlic and mint. Saute for 2 minutes. Add the couscous and olive oil and saute for 1 minute. Stir in the veggie stock and bring to a boil, stirring for 2 minutes. Reduce the heat and cook for 1 minute. Stir in the remaining butter and remove from the heat. Cover and allow to sit for 2 minutes. Uncover and fluff with a fork. Fold in the feta cheese. Season with salt and pepper. Mound the couscous in the center of the platter. Garnish with fresh rosemary and applemint.

After a short test period, it is official, Torpedo, a 2 year old golden cascade/khaki campbell has become the newest member of the Green Hill flock. She has taught the flock to break dance, likes to quack, and enjoys 33 degree baths daily. Welcome Torpedo.
